The Rose Room Cafe and Tonic Bar in Webster will begin selling alcoholic beverages on Thursday after state authorities approved a request to grant the town an additional all-alcohol license, which the town voted to request at its October 2019 town meeting.
Jess Sabine, co-owner of The Rose Room, said the restaurant was officially awarded the alcohol license two weeks ago, and has spent the time since preparing to kick off sales.
In advance of starting alcohol sales, Sabine said, the business, which just celebrated its two-year anniversary, hired additional staff members.
The cafe, which specializes in locally-sourced and homemade offerings, was started by Sabine and her husband, Bill Sabine, and is family run. The alcoholic drink offerings will be in keeping with that theme, she said.
Sabine estimated the cafe would serve over a dozen local beers from breweries in the northeastern United States, as well as about a half dozen wines. In lieu of a full bar, the cocktail menu will be limited and will in part aim to highlight housemade sodas.
The cafe announced the new offerings in an Instagram post Friday morning. Beginning Thursday, Dec. 10, The Rose Room will be open until 9 p.m. on Thursdays, Fridays and Saturdays, serving food and drink.
“We always knew we wanted to serve incredible spirits and local beer, and we’ve been waiting for confirmation for over a year, and it’s finally happening!” the business wrote on Instagram.
