Wormtown Brewery’s motto, “A piece of Mass. in every glass,” is a testament to the locally sourced ingredients used in every brew coming out of the Shrewsbury Street production facility.
Without hesitation, Managing Partner David Fields can name-drop dozens of companies and organizations with which the brewery has worked, including Valley Malt in Hadley, Medusa Brewing in Hudson, Ales for ALS and the Black Ale Project. The brewery even helped Pow! Wow! Worcester feature large murals around the city from local artists.
“If you can work with somebody who’s smarter than you and better than you and does something different than you, why wouldn’t you? You learn every single time,” Fields said.
For the fall pumpkin-craze last year, the brewery for the second time enlisted Worcester’s Table Talk Pies to release a pumpkin beer. The brewing process literally consisted of Table Talk and Wormtown workers tossing pumpkin pies from Table Talk into the brew mix.
Dunkin Donuts, the New England culinary staple, found its way into Wormtown’s beer. The brewery and Dunkin released DDark Brew in December, a stout brewed with dark roast beans.
The owner of Wormtown’s building is a Dunkin Donuts franchisee and the chain’s head chef is a Worcester native.
“It still really comes down to the same thing: ‘A piece of Mass. in every glass,’” Fields said. “We love using local ingredients and local people.”
One of those local companies is Acoustic Java, a Worcester artisanal coffee roaster and cafe.
David Fullerton, owner of Acoustic Java, said he’s been working with Wormtown for eight years. The relationship has not only exposed beer drinkers to his coffee, but his coffee drinkers to alcohol. Fullerton uses barrels from a local store to barrel-age some of his coffee.
Acoustic Java beans have been used in four Wormtown beers, including a new nitro cold brew using barrel-aged coffee.
“It’s rewarding on a number of different levels,” Fullerton said. “We’re helping them to build their community, and we’re adding our own artisanal stamp or touch to that mix.”
The brewery is working with three other Worcester breweries to release a dry-hopped beer for American Craft Beer Week in May.
Wormtown Brewmaster Ben Roesch teased two exciting new Table Talk-esque collaborations for the near future but remained tight-lipped on the details.
“We’ve always got things in the works,” Roesch said.
